Tavern’s Famous Chopped Salad of Grilled Salmon & Brown Rice
Serves 4 to 6

Salmon
2 or 4 pieces of salmon, 6 to 8 oz or substitute for grilled chicken or shrimp

Brown Rice
2 cups Brown Rice
3 Cups of vegetable stock or water

Add rice & vegetable broth to a pot till boil; reduce to lower setting & cover
Cook approximately 15 to 20 min

Vegetable Confite
In a large pot heat water add 1 tablespoon of salt, blanch all the vegetables below & cooled on ice water

1 cup broccoli florets
1 cup cauliflower florets
cup diced carrots
cups diced red peppers
2 cups of chopped baby field green or any other lettuces

Caper Lemon Vinaigrette
cup Dijon mustard
2 cups olive oil
cup lemon juice
cup shallots diced
cup capers
cup sherry vinegar
Mix all ingredients in blender

Garnish
Kalamata olives
Capers
Fresh parsley, dill, thyme chopped aprox 1/4 cup
