Serves 4 to 6Salmon
2 or 4 pieces of salmon, 6 to 8 oz or substitute for grilled chicken or shrimpBrown Rice
2 cups Brown Rice
3 Cups of vegetable stock or water
Add rice & vegetable broth to a pot till boil; reduce to lower setting & cover
Cook approximately 15 to 20 minVegetable Confite
In a large pot heat water add 1 tablespoon of salt, blanch all the vegetables below & cooled on ice water1 cup broccoli florets
1 cup cauliflower florets
½ cup diced carrots
½ cups diced red peppers
2 cups of chopped baby field green or any other lettucesCaper Lemon Vinaigrette
¼ cup Dijon mustard
2 cups olive oil
¼ cup lemon juice
¼ cup shallots diced
¼ cup capers
¼ cup sherry vinegar
Mix all ingredients in blenderGarnish
Kalamata olives
Capers
Fresh parsley, dill, thyme chopped aprox 1/4 cup
